I am a big coffee drinker too, a friend made a poster for me that says "Queen of Caffine" on it for me..... To try and keep myself from drinking pot after pot, I drink Chai with a bit of sweetner (like Truvia or Splenda) and Almond milk. Its yummy, warm, and it keeps me going when I am not chugging coffee!!
I love Choice Organic Teas. They have just about every flavor you can think of. My favorite so far is Darjeeling. I'm trying the Vanilla tea next week.
I am trying to cut coffee too...so far I am having great luck with 1. green tea with a slice of lemon and agave to sweeten, 2. Tazo has a tea called "Awake" that I really like in the morning, and then I have been been looking for a Yarba Mate I can stand and think I finally found one but will have to get the name and get back to you - tons of health benefits in green tea and Mate too.
I had a favorite a few years back, a chamomile with orange that I got from Trader Jo's but they stopped carrying it. Haven't found a chamomile tea I like since. Though I found Tension Tamer with Kava, but it is not good long term on the kidneys so I use it only when really wound up.
I have only found one loose tea I like and that is lemongrass, at least so far. Still trying though.

My opinion on making tea from herbs is to use a French press. They're about 30 dollars and you just put in tea leaves, herbs whatever and hot water. When it's done steeping you press it down and voila!
For me I love catnip tea. It has a mild sedative effect on humans so it's great for end of the day relaxing. I also love basil tea.
If we're talking store bought I've found I really only like black tea. They taste way better than regular tea or green tea to me. They have some really delicious blends. And if you look up the ingredients they also have some that have great health benefits. I love to buy the organic teas. They just have so much more flavor.
I always take my tea with milk (I use rice milk but regular tastes good too) and a little sugar.
