Mix water, milk, sugar, vanilla and cinnamon into a got sized pot and dissolve all the ingredients into it while you bring the slurry to a boil. Once slurry is boiling, add rice and mix well. Reduce heat and simmer (slooooow bubbles) for 10 minutes. Add the egg whites and mix well, this adds abit of chunkiness to the pudding that I like. Let stuff continue to boil for another 10-15 minutes until the rice is just fluffing and there's just a little slurry left.
Dump pot into a container and scoop out a cup of the rice and puree it in your food processor or mash it up by hand. Take that mash and mix it back into the rice mix and let cool.
Never had tapioca ... just was hungry and looked around the house for something to nom on, and since I broke and we're running low on food, I found the rice (50 lb bag of it lulz) and came up with something to do with it.
yeah, I'm down to 4 pork chops, a bag of veggies (tomorrow's dinner), some milk, 3 eggs, a huge bag of rice, beer, half a bag of cereal and spices for the next three days of feeding the wife and kids ... just tryin' to hold in until that last paycheck comes in on Thursday. But was hungry so i thought, I have sugar and spices, and I haz rice.
