Crust:
16 oz pound cake mix
1 stick of butter, melted
2 eggs, slightly beaten
Filling:
8 oz cream cheese, softened
16 oz powdered sugar
2 eggs
1 1/2 T. vanilla
Preheat oven to 350 degrees F. For the crust, combine pound cax mix, melted butter, and 2 eggs with a for until moist. Spread in an ungreased 9 x 13-inch pan. Pat the crust mixture in the bottom of the pan and slightly up the sides. In a separate bowl, beat the cream cheese and powdered sugar together for 3 minutes with an electric mixer on high (If no mixers, mix with whisk until it is creamy and smooth. Don't slow down!) Turn mixer at low and add the eggs (One at a time slowly) and the vanilla. Mix well. Pour over crust and bake for 35 to 40 minutes. If desired, sprinkle with additional powdered sugar over the top of the cake after baking.
This is a big fav with both younger and my older cousins. Think of it like a Cheese cake almost! Super good!
