Default Yum Yum Filling

Yeah I coined the name for this recipe. As you will notice I canna name anything creatively.

Originally I found a recipe for home made broccoli and cheese hotpockets. I should earn an award for epic fail. So I won't be posting what I was originally supposed to be making. Instead I offer you my version of the filling that I made ( original filling recipe used only parmesan cheese, mozerella cheese, salt, pepper, minced garlic and broccoli).

This filling is great if you want to make a grilled cheese like sandwhich ( or if you have a sandwich making machine your own hotpocket.....I have no idea why I didna think of this before my misadventure in culinary path making) or you can use it in omelets or even as salad bits! I myself keep returning to the container to nibble bits of it as is.....

So what do you need?

Well I boiled up about 10 oz. of frozen broccoli until tender. Then I drained and set aside.

While that was going on I fried up 10 pieces of bacon.

While the bacon was a sizzling I diced up ( using a dicing machine thingy yay) and sauteed 1 red bell pepper and 1 small yellow onion ( until the onion was translucent....oh yeah and I used Pam nonstick spray instead of butter or oil).

While all that action was going on I grabbed a bowl and put in about 1 1/2 cups of shredded mozarella cheese, 1/2 cup parmesan, 2 tsp garlic powder, a dash of salt, and about 1tsp of basil ( I love basil) in a bowl and mixed it all up.

Back to the broccoli. I have this little chop o matic ( mini food processor) and so minced the hell out of the broccoli ( this is for personal taste....I don't like eating big chunks of the stuff). Then I added it to the bell peppers and onions ( who were hanging out on Low setting by now....when I added the broccoli I fired the setting up a tad).

Back to the bacon. Once they were done cooking I patted the grease off of them and subjected them to Choppy ( my chop o matic). If you don't have a Chop o matic then this is the part that you manually turn your cooked bacon slices into bacon crumble bits.

Okay so one bowl has bacon crumbles, one bowl has cheese and herb mix, and one skillet has broccoli, and sauteed red peppers and yellow onion diced bits.

Take the skillet bits and dump them in cheese n herb bowl. Add bacon crumbles. Stir stir stir mix stir and WHA LA!!!!

You have what I have coined "Yum Yum Filling". Take out or add your own ingredients. It's tasty AND versatile. And it makes PLENTY of filling ( about 8 sandwiches worth give or take).

If you want to try the " grilled cheese" version of this:

Prep your bread ( two pieces) by spreading mayo on one side of bread ( do this to both pieces). On that side sprinkle a mixture of parmesan cheese ( about a Tablespoon), Basil ( 1 tsp or so) and some Johnny's Seasoning Salt ( about 1/4tsp).
Slap one piece of bread ( season side down) on the pan ( setting mediumish) , dump some Yum Yum Filling on the bread and top it with the second slice of prepped bread ( seasoned side out).
Flip when bottom side is golden then cook second side until golden.

Yeah I know I just gave instructions more or less for grilled cheese sandwiches ( sans cheese replaced with Yum Yum) however there are people who have never made a Grilled Cheese ( or Yum Yum) sandwich before and I want everyone to have the chance to enjoy this filling.
